I’m quite certain that Banjo is far less concerned about the beauty of her treats as much as the flavor.
But I definitely appreciate recipes that produce cookies that are both edible — and, I gather from Banjo, delicious — as well as cute to look at.
This recipe takes a little longer to make because the final treats are a swirled combination of 2 separate doughs, creating a beautiful marbled effect.
Marbled Banana Carob Dog Cookies
- 1 ripe banana
- 2 eggs
- 3 tablespoons honey
- 3 tablespoons olive oil
- ½ teaspoon cinnamon
- ½ teaspoon baking powder
- 2½ cups plus ¼ cup oat flour
- ¼ cup carob powder
- Heat your oven to 350 F.
- Mash the banana with a fork in a medium bowl.
- Mix in the eggs, oil, honey, cinnamon and baking powder.
- Stir in 2½ cups flour.*
- Split the dough in half.
- Add ¼ cup flour to one half of the dough and mix well.
- Add ¼ cup carob powder to the other half of the dough and mix well. By now you should have one light dough ball without carob and one dark dough ball with carob.
- Divide each half of the dough into 5 balls of dough.
- Pair each smaller ball with one of the opposite color (i.e., one non-carob dough ball with one carob dough ball).
- Roll each pair of dough balls out between 2 layers of plastic wrap to ¼-inch thick, and cut out with a cookie cutter.
- Place cookies on a nonstick baking sheet and bake for 10 minutes. Flip them over and bake for another 10 minutes.
*The original recipe called for only 1½ plus ¼ cup of oat flour, but when it came to step 4, I found myself with a bowl of gloopy batter instead of dough. I kept adding flour, ½ cup at a time, until I finally had the right consistency. I recommend you do the same to avoid adding too much at once.
I thought these treats turned out beautiful.
Although I can’t confirm that Banjo thinks they’re beautiful too, I can report that she finds them scrumptious.
